Dan, I believe that sheetrock is indeed similiar as it is sometimes called gypsum board but I have no idea what additives might be added to form the board during manufacturing.
Dan, There is another calcium compound that is ground/powdered and usually used when the pH is already high or if you want to add calcium without raising the pH too much. It is called gypsum.
